What's for Dinner Wednesday
It’s been forever since I blogged and I miss it. I am trying to make more time for the things I love one of which is writing.
I love cooking but as a new mom it has been really hard to get into a routine. Typically I meal plan a month at a time so I don’t have to plan every week — I just make a grocery list a week at a time. For this month, I needed something simpler. In my home planner, I keep a list of our favorite meals. This is an easy, quick reference for me when I am not feeling creative. There are 6 weeks in September(overlapped with August & October). I picked 2 favorite lunches, & 2 favorite dinners per week. We will fill in with leftovers, Friday pizza nights & take out.
So for What’s for Dinner Wednesday it’s Creamy Lemon Chicken. This is a super simple recipe but as always I make a few tweaks. I had some baby bella mushrooms & sliced onions that I had sauteed in balsamic glaze in the fridge. I added those in at the end to just warm through. This time I didn’t have white wine on hand so I used white wine vinegar which worked just as well. I served ours over orzo pasta. I have also saved the sauce and served the sauce over pasta the next night—so good. I would lick the pan this sauce is so good.
