I didn’t intend for this to be a food blog but I do really love cooking and I know it can be a large pain point for people in their families & schedules. My hope is maybe you get a little inspiration or find something yummy for your family in my food posts.
I am not usually a meal prepper. Honestly, I don’t love leftovers and sort of get bored of the same thing after 2-3 days/meals. Anne Rawlins is eating alot more these days & I am trying to expose her to a variety of foods. Because this is how life works, she eats dinner a little earlier then we do and I don’t want to be cooking /feeding/cleaning for 2 hrs straight each day. No thank you! I am also NOT a morning person. I need our morning routine to be as easy as possible. This Sunday I decided I was going to get ahead of the game & prep items for all of us for breakfast and dinner.
Here is what I made:
Apple & Carrot Muffins for Anne Rawlins from Yummy Toddler Food (I put a little peanut butter puree on these and they were a huge hit)
Banana Pancakes for Anne Rawlins, again added the peanut butter. She likes these but the muffins more.
Chicken Meatloaf — so I have been making her meatballs the last 2 weeks which she loves but instead of rolling them into balls, i decided to just make it like a meatloaf since I have to cut into tiny pieces anyways.
1 lb ground chicken
1/2 cup italian bread crumbs
1 egg
1 teaspoon of minced onion
1/4 cup grated parm
Combine all ingredients in a bowl. Spray a loaf pan with cooking spray. Cook at 375 for 25-ish minutes. Serve right away with veggies of your choice. I cut Anne Rawlins’ up in small pieces for her and serve with broccoli.
I had some blueberries that were about to go bad so I made some blueberry muffins. Next time, I would add some lemon zest to the crumble on top & a little lemon juice to the batter. They were very good!
Breakfast casserole : I make this different every time but here is what I did for this one:
8 eggs, beaten
1/4 cup milk
diced onion
diced bell pepper, I used the pre cut ones for onion and pepper
Everything but. the bagel seasoning, to your taste
2 handfulls of baby spinach
shredded parm, 1/4 cup
shredded cheddar cheese, 1/4 cup
8 croissants, torn
Preheat your oven 350. Tear croissants and line 9X13 pan. Combine all your other ingredients in a bowl. Pour over the croissants. Bake for about 20 min — you just don’t want any egg still liquidy. You can add sausage, ham or ground turkey(cooked) to it if you want I just didn’t have any.
